Acura Integra question. Car THermostat bad?

I have a 90 acura integra. 2 days ago, I was driving on the freeway and there was bumper to bumper traffic, when i started to notice that the temp needle was going up. It went up to almost where the H is. So, I had to get off the freeway. Once i got off the freeway and was driving on the streets, the temp needle went back down, to its normal position. I checked the reserve tank and it was good. I changed the hoses and water pump like 2 yrs ago. What can be the problem? any help?
the fan is working allright. my car has 250,000 miles. what is the head gasket? what do you replace? how much am i expecting the cost will be?
and by the way, I dont use the air conditioner in my car.
i just checked my fan, its not working. How can i test my fan if its working or not? any help please.

Checking the coolant tank on a vehicle that old means nothing.

You MUST check the radiator, (when cold) to see if it is full.

If the vehicle cooled down when moving again - chances are the stat is O.K.

Check the electric fan to see if it is operating when the temp is 195 or above. There MUST be air moving through the radiator at slow speeds which requires the fan. At highway speeds - air is forced through the radiator without the fan.

It must be clean, (if it is dirty - the contamination will cause some restriction to proper cooling), If it is dirty then you are too late to change it - it must be flushed, cleaned, flushed and a 50/50 mix of anti-freeze and distilled or de-mineralized water - NEVER TAP WATER.
