Cast iron is one of the best cookware you can own, but it requires proper care. If you have found your cast iron turned to rust in the cupboard, do not throw it away. Instead, restore it to good as new condition. The steps are quick and easy.

Most cast iron that has rusted just needs to have a good cleaning in a sink of nice soapy water. The quickest way to clean the pan of rust is using steel wool. It is fine enough to get most of the rust out of the cast iron pores. Once you have scrubbed the rust away, rinse the pan and immediately dry it. The pan is now ready for seasoning before usage.

Should you have a cast iron pan that has turned to thick rust; you will need to use sand paper to remove it. A fine grade of sandpaper should work. After taking off the bulk of the rust, wash the pan in hot soapy water. Once again, use the steel wool as the final scrubbing method. Rinse the pan, dry it and season well.

Seasoning is as simple as placing the pan in the oven. Turn the heat to 400 degrees and wait for the pan to reach that temperature. Turn the oven off and remove the pan. Cast iron breathes and this step will open the pores. Once it is cool enough to handle, take a cotton fabric and very lightly coat the pan with oil or lard. Place the pan back in the oven. Set the temperature to 400 degrees. Once it reaches that temperature, turn the oven off and walk away. The pan should cool inside the oven gradually so the seasoning locks into the pores of the pan.

Your cast iron will continue to be one of your best pieces of cookware for years to come if you keep it dry and rust free. When storing your pans you should store them without covers and with a paper towel in each pan.

Steel Pan - Both a Musical Style and an Instrument

If you stop to think about it, it may be a bit extraordinary that a musical term would have two distinct meanings. Rather than suggesting a double entendre here, i.e., some second, implied or hidden meaning, what is being referred to is that of both a noun and an adjective. Steel Pan, perhaps somewhat uniquely, refers to both the Steel Drum instrument itself and the musical style in which the instrument is typically featured.

Steel Pan may have, as of late, become the more common term for the Steel Drum. Certainly, anyone familiar with the instrument would be well aware that it was initially fashioned out of a 55-gallon oil drum and became known, hence, as the "Steel Drum". Yet, when one refers to the "Steel Pan", it is generally acknowledged that the musical instrument itself is being referenced.

On the other hand, if one suggests going to 'listen to' some Steel Pan music, it generally seems to imply a genre of music. The term denotes a decidedly Caribbean musical style, in which the Steel Drum is, of course, predominantly featured. Additional instrumentation, however, may also be commonly included as part of this "sound" or musical style, while the melodic or lead instrument would be notably that of the Steel Drum.

The band IRIE TIME features the Steel Drum sound as an integral part of their music. The bridge between the instrument and the musical style associated with the instrument is reflected in their every performance. It may additionally be stated that Soca-Calypso and Pan Steel have oftentimes become synonymous. The "(Are you feeling) Hot Hot Hot" Soca beat is the perfect rhythmic accompaniment for the instrument. Further, while we hear the Steel Drum played in a soothing style over slower beats, such as that of Reggae, the Soca-Calypso rhythm invokes the most direct connection to the Caribbean and, thus, the type of music typically being referenced.

Another variation in the terminology used in describing this music is to refer to the "Steel Band". This connotation suggests, perhaps, a number of Pan players being assembled and, in this context, the lead melody would be carried by the soprano or tenor Pan, or as a duet with a double second. However, what is more often the case in referencing the Steel Band is, in fact, again referring to a certain style of music, i.e. Caribbean music.

It is natural that the casual observer would refer to Caribbean music as Steel Pan, since the instrument was developed in, and is unique to, the Caribbean. Moreover, the Steel Drum flavors practically every variety of music coming out of the region, from its origins in Trinidad and across the Caribbean to Jimmy Buffett in Florida, as well as others. The Steel Drum invokes images of pure white sand on a palm tree lined beach with clear blue waters, and that is an experience many listeners of the genre seek. They're looking for a Caribbean music experience, and their term for that experience is Steel Pan.

How to get cooked on grease stains off of the side of a stainless steel pan?

I left my boyfriend's stainless steel pan on the stove with the gas left on for about 2 hours on accident, and the oil from what I had cooked in it spattered over onto the sides. The sides are that gleaming, mirror finish stainless steel, and these stains are dark brown and seem like they are part of the pan now. They're totally flush with the surface and scraping with a wooden scraper does nothing. Is there any way to get this off without damaging the surface? I got all the stuff off every other part of the pan but just don't know what to do about this. Thanks in advance.

Do you have a deadline? If yes, I think using a commercial stainless steel cleaner, or silver polish is the only quick solution, but that's never worked for me. However, if you have a couple of days and a BIG pot, you can get off every last spot easily by "cooking" the burned pan in a larger pan. Cover it with water and add a cup or so of either ammonia, OR white vinegar, OR dishwasher gel/powder OR Baking soda. Heat it to a low boil, Be sure to NOT MIX any of those or you could have big problems. Also, be especially careful handling the ammonia. Wear eye protection - the stuff is really caustic! And don't do what I did -I sniffed it, because it will fry your sinuses! I have had each of those work for me at one time or another, so maybe it's more the heat and the soaking than the additive that does the trick. Maybe plain water and dish soap would work just as well. If you are somehow in a situation where you don't have a larger pan, or ammonia, or the other stuff - you could even try putting the pan in a larger container,(Waterproof, of course) and pour hot water and soap (or?) over it and cover that for a couple of days. Sometimes ya gotta get real creative! But, since nobody else has answered, I thought I would give you something harmless to start with. Good luck! Oh yeah - use plastic scouring pads, or Scotch thingies when the stuff without scratching the boyfriend's beautiful stainless.
